Mini Meatball Sandwiches

I love the Pioneer Woman. She has the best cooking blog! I tried these the other night. You should know that I ate 3 of them.  And then had 3 the next day for lunch. The only thing I did differently was I melted my cheese on the bread in the oven. Made like a toasted sandwich. Man were they good!

Fried Oreo Cookies

I was inspired by the Pioneer Woman Cooks! I love the pictures she puts into her cooking blog, so I guess I kind of stole her idea, although I like the word borrow better. Hope you like it!

Pancake mix
water
Oreos
Oil for frying
Powered sugar

Mix the pancake mix and water, not as much water as the recipe on the box calls for. You want the batter to be a little thick.

Heat oil to about 350. I used our Old Faithful, an old fry daddy we have had since we got married.

Dip Oreo's in batter, and it to the hot oil. Fry for about 1-2 minutes then turn over for another minute.

Put Oreo's on paper towels and sprinkle with some powered sugar. Let sit a few minutes and enjoy!
